Looking for a way to spice up plain old grilled chicken? This is one of my favorite ways to cram a lot of flavor into a staple in our kitchen, grilled chicken. If you have a few extra minutes and don’t want to go with your typical dry rub then try out this simple 20 minute marinade.
Preparation of this dish is SO EASY. This is it:
Season your chicken with salt, pepper, and a pinch of red chili flakes. Mince a large shallot, 3 cloves of garlic, 1 TB fresh Rosemary, and 2 TSP fresh thyme. Zest a lemon, an orange, and a lime, then squeeze them and squeeze juices into a bowl. Combine all ingredients and pour over chicken. Let chicken marinade for 20 minutes then grill until internal temperature meets 165 degrees.
Serve with a big salad or your favorite sides. Keep it simple and easy and you have a great go-to weeknight meal that tastes great and is healthy too!
