Everyone who knows me, knows that I love a good cocktail, or a nice glass of wine. Usually I stick with something simple and easy, like a real lime margarita, or a glass of pinot noir. In the summer time as the weather heats up I find myself wanting something cool and crisp and refreshing. Today I am sharing with you a low calorie wine cocktail that I enjoy on hot summer days or even at night!
One of the best things about this recipe is its simple, pour a couple of ingredients into a pitcher, and viola, you’re done! It also keeps in the fridge for a day or two so you don’t have to drink it all in one sitting, but you won’t find any objections from me if you choose to! Serve it in champage flutes if you want to be fancy, a traditional highball glass with a fun straw if you just want to keep it festive, or even a simple wine glass if that is what you prefer. I chose to make this one with these beautiful pink lemons that I had on hand from Trader Joes. Pink lemons are perfect for beverages because they are less acidic than traditional lemons. As the lemons age their inner flesh intensifies and becomes a bright pink color. These lemons here are a little on the young side, but still perfect for my summer beverage.
- 1 Bottle Pinot Grigio
- 2½ Cups Lemon Italian Soda
- 2 Pink Lemons, Juiced
- Frozen Rasberries
- Combine all ingredients into a large pitcher. Stir until well mixed. Serve over ice.
To make this recipe combine all ingredients into a pitcher. I chose to use frozen raspberries instead of ice cubes. Not only does this effectively cool my drink, but it provides a nice pop of color and helps accentuate that this isn’t a traditional lemon spritzer!
You can also substitute and citrus or fruit for the pink lemons. Try dark blood oranges to get an amazingly beautiful spritzer like this.
Strawberries and fresh mint is another classic combination. You will absolute adore this recipe.
